Winding a watch gives power because it winds up a mainspring that looks like a coil of rope, the more you wind it, the tighter the coil gets. Thus, to over-wind it you need to actually break the coil which becomes harder the tighter the mainspring gets. Thus, it’s very hard to over-wind a watch!
